Organic Honduras Capucas is a coffee from the La Paz area that is grown and cultivated by the women of the organization "The Coordinator of Rural Women in La Paz" or abbreviated: COMUCAP, which was founded in 1993 with the social purpose of working for equality, sustainability and economic development. Today, the organization has grown considerably and has 256 members from the surrounding districts.
The community largely ensures opportunities for many women in the area - opportunities they would not otherwise get, including training and education in starting and running a coffee farm. Over the years, the farms in the community have achieved a high degree of organic production, which is also fair trade.
Organic Honduras The Capucas coffee trees grow at an altitude of 1700-2000 m above sea level in the mountain area of Comayagua in southwestern Honduras. Growing at this altitude produces a low average temperature and a hardier bean that qualifies as "Strictly High Grown" (SHG).
We roast the coffee fairly hard at high heat at the start of the roasting, to get as much heat into the bean at an early stage, which happens for 7-8 minutes. The heat is then gradually lowered according to a special profile and a series of measuring points.
When it is roasted perfectly, it is medium roasted and not too dark. In the cup, the taste is strong with a unique acidity and aroma, which is rounded off in an intense aftertaste that tickles all the taste receptors in the oral cavity
