How to make white tea?
First, the tea leaves for both green, black and white tea are harvested from the same kind of bushes. The tea leaves are then sorted into black tea, green tea and white tea. The leaves that will become white tea are taken out to a courtyard, where they are gently laid on special mats.
These leaves are sun-dried at approx. 45 degree heat. During the drying process, the white tea leaves undergo a natural fermentation of between 8 and 12%, which is a relatively short fermentation period.

Why is this the best way to prepare white tea?
The white tea leaves come from the tea bush Camellia Sinensis. If you're a tea geek, you might know that this is the same bush from which green and black tea is extracted. The white tea leaves are handpicked a few times a year. This is done early in the spring – before the tea bush has flowered. Here, the young buds are picked on the bush, which start by being covered with a characteristic white down. It is from this that the name 'white tea' comes.
