How is green tea made?
Green tea, is like black tea made from the leaves of the tea plants Camellia Sinensis and Camellia Assamica, or from hybrids of the two. In this way, green tea is “real” tea, just like white and black tea. The difference lies with in how the leaves are processed after harvest.
Shortly after being picked, the tea leaves are carefully spread out on mats in a kind of greenhouse, where they rest in the sunlight. During this stage, the leaves ferment naturally, with the temperature in the leaves rising to around 60–65°C over a few hours. Once natural air is let in, the temperature suddenly drops. Through this process, the leaves ferment between 16–30%.
Brew the perfect cup of green tea
There are many different varieties of green tea, and depending on the specific type, there are variations in brewing temperatures and steeping times that bring out the best qualities of the tea. It may seem overwhelming to memorize the correct brewing conditions for every type, but with Nordic Tea, the perfect cup is never a challenge – all our teas come with precise brewing instructions to ensure you get the best out of every cup.
As a general rule, green teas should be brewed at around 75–85°C, which is lower than for many other tea types. This is because hotter water can make the tea taste bitter. While some may enjoy a stronger, more bitter profile, it can mask the delicate nuances that make green tea so special.
Steeping time is also crucial. Green tea should not steep for much more than two minutes – and never more than three minutes per cup. Over-steeping will result in bitterness and strip the tea of its refined flavor notes.
Finally, dosage matters. To avoid bitterness, we recommend using no more than two grams of tea per cup. Using more can also lead to an overly intense, bitter taste.

If you enjoy broadening your tea repertoire, you may want to try the popular matcha tea. Matcha is a Japanese green tea in powdered form, offering many of the same qualities as traditional green tea.
Matcha production follows many of the same steps as other green teas, but with some important differences. Whole green tea leaves are harvested after being grown in the shade. These leaves are carefully processed and steamed to enhance their flavor. They are then dried and ground into a fine powder.
The result is the beloved matcha tea: a finely milled, bright green powder that you whisk directly into water instead of steeping leaves.

Is there caffeine in green tea?
Simply put, yes. On average, a cup of green tea contains about 27 mg of caffeine – though the exact amount depends on factors such as the size of your cup and the amount of tea you use. While the caffeine level is lower than in coffee, you will still feel an energizing effect. At the same time, it takes very large amounts of green tea to cause the unpleasant side effects sometimes associated with coffee, such as nervousness or restlessness.
Is green tea healthy?
There are not many evidence-based studies that with certainty can confirm that green tea is directly health-promoting.
However, a 2024 study advocate a link between green tea and improved survival rates among women with ovarian cancer. According to the research, women who drink 1–2.5 cups of green tea daily may have a 16% higher chance of survival compared to those who do not drink green tea.
This potential benefit is thought to be connected to the tea’s antioxidants – especially polyphenols and the compound EGCG – which are believed to inhibit the growth of cancer cells.
In addition, green tea may help improve fat metabolism, enhance concentration, and even reduce the risk of cardiovascular diseases.
