Peru Cajamarca Organic Coffee
Medium roasted - Peruvian organic coffee from Aprocanorsi, offering flavors like caramel, cocoa, light citrus acidity, and a sweet taste of dried fruit. Peruvian organic coffee from Aprocanorsi; a group of producers operating in the Cajamarca region in northern Peru. Nestled in the Andes Mountains, 500km from the Equator and bordering Ecuador to the north, with the Amazon to the west and the Pacific Ocean to the east, the region is ideal for cultivating specialty coffee.
Currently, there are over 2200 small producers contributing to the coffee farmers' cooperative, which oversees de-pulping and the processing steps for the raw coffee. Each coffee farmer handpicks their coffee cherries and de-pulps (removes the skins) locally on the farm, often using manual traditional de-pulpers. The raw coffee is then delivered to the local mill, where the green beans are prepared for export. The raw coffee is sorted once more for defects and then shipped to the EU.
A significant challenge for the coffee supply chain in Peru is ensuring timely delivery. With infrastructure issues, constant delays, and exponentially rising demand, coffee co-ops are implementing measures to further improve quality. The group plans to install covered drying of the green beans, supported by financial backing from the local community. The goal is to assist producers in properly drying their raw coffee before it undergoes the final processing steps, which can significantly impact quality.
The coffee is grown at an altitude of 1400-1800 meters and is primarily arabica types such as Typica, Pache, Caturra, with Typica forming the majority. The coffee cherries are harvested from July to October and processed using the washed method, where the cherry skin is pulped off, and the mucilage and coffee beans are fermented in large tanks and then sun-dried or dried as shown above in drying tents on raised beds.
We roast this coffee using a traditional roast profile and the roast level is medium. The green beans receive a good amount of heat at the start of the roasting process to quickly introduce heat into the beans. The heat is gradually reduced and finished at a very low heat.
This creates a unique taste and character, with a soft coffee flavor and body that is gently rounded in the cup with a refined aftertaste. Typically, you will find flavors like caramel, cocoa, light citrus acidity, and a sweet taste of dried fruit in the cup.
