Organic fenugreek seeds

Common fenugreek (Trigonella foenum-graecum) is an annual, herbaceous plant with an ascending growth. All parts of the plant smell strongly spicy. Fresh shoots and dried seeds are used as a spice either pure or in various mixtures with other spices, e.g. curry.

The plant's seeds in particular are popular as a spice in Indian/Pakistani and Thai cooking and they are an important ingredient in most curry mixes. The plant's leaves (dried or fresh) are also sometimes used as an herb. Fenugreek seeds are most often found in the dried state. They are yellowish and diamond-shaped and very hard. Among other things, the seeds contain a lactone (cyclic ester) called sotolone (3-hydroxy-4,5-dimethylfuran-2(5H)-one). Sotolon is strongly aromatic and mainly responsible for the characteristic curry smell. Consuming even very small amounts of fenugreek seeds can give rise to a strong odor from sweat and urine.
