Pomeranian peel

Pomeranian peel, pickled, candied. It is orange peel that we sell as Pomeranian. And we have always done that in Denmark, because Danes generally do not like the extreme bitter taste of the orange. For the classic English bitter orange marmalades, between 6 and 8% oranges are used to make the marmalade bitter.

The orange fruits have an enormously large family, which starts at the sweetest end with the Seville Orange and ends at the bitter end with the Pomeranian. In between is the Bergamotte orange (the one used to flavor Earl Gray tea and Althea candies), and just before the bergamot fruit comes the type of orange used to candied orange peel. It is not very sweet but slightly aromatic (like the bergamot). This type of orange comes mainly from southern Italy, from plantations that also have bergamot (around the town of Bergamot, hence the name of the orange fruit).

It is almost impossible to find real Pomeranian orange in the trade, but some ethnic greengrocers in Copenhagen occasionally have a batch of Pomeranian as whole fruit. Then you can apply candy yourself.
