Cui Min means 'delicate sensitivity' and refers to the rather large, fine-haired white buds. However, since these white buds do not have a significant taste, the wise Chinese tea producer always rolls a correspondingly sized green leaf, which is fermented together with the buds in a carefully chosen ratio, so the taste gains the fullness a great tea should have. This ratio changes from year to year. Fermentation level approximately 12%.
