This coffee is roasted following a lighter roast profile, and the roast level is on the light side. The green beans are given a lot of heat initially in the roasting process to quickly introduce heat into the beans and release the natural moisture within them. High heat continues almost to the end, where the heat is quickly reduced at the first crack.
This results in a very special taste and character, with a smooth and balanced coffee flavor and a rich body with a light acidity. The sweetness is really deep and flavorful in this coffee, appearing with hints of light chocolate and delightful fruit notes.
