Matcha Kyoto Cha No Yu organic
This matcha from Kyoto, Japan, is a true ceremonial matcha. It is of the highest quality, and is used exclusively for chadō (Japanese tea ceremonies / translated to the way of tea).
When a ceremonial matcha is to be produced, the tea trees are allowed to grow in the shade, 3 to 4 weeks before the hand picking. The reason for this is that the chlorophyll in the leaves increases, giving the characteristic green color and a greater production of the amino acid, Theanine. It is the theanine that gives the incredibly intense flavor.
This intense flavor is sweet, silky and has notes of grass. The lower the quality, the more grassy flavor and bitterness there is.
