Organic coffee Guatemala Finca Ceylan Y Anexos is a super complex organic coffee, with many different nuances, a soft body and a nice impression in the cup. Compared to our other coffee from Guatemala in the range, which comes from Antigua, this coffee is milder, but with more nuances of taste and a deeper aroma.
The farm has been owned by the Echeverria family since 1870 and has always grown and processed coffee. Originally the farm was called Finca Y Colima, but over the years more farms have been added and the name changed to Ceylan & Anexos. The farm's total area is 403 ha, of which 2698 ha are used for coffee cultivation.
The farm mainly uses labor from the local town, in order to generate as many jobs as possible locally. Finca Ceylan Y Anexos also contributes to the social projects with houses, drinking water and training for employees and their families.
The farm also wants a social profile, with protection of the local water reservoirs and the vegetation in the area. Water reservoirs are protected, which is why hunting and fishing are prohibited. The residues from the wet mill, which mainly consist of the pulp and pulp, are used as organic fertilizer in the coffee plantation, creating a self-sufficient ecosystem. To avoid pollution in the local streams, the water from the fermentation tanks is filtered through oxidation filters.
The coffee trees grow at an altitude of 1,050-1,400 m above sea level with an expected annual rainfall of 3,500-4,000 mm and an average temperature of 20 degrees, which makes the climate ideal for coffee cultivation. The farm produces exclusively organic Arabica coffee of several different varieties: Bourbon, typical, Mundo Novo, Robusta, Maragogype, Guexa. Annual production is around 180 tons of parchment coffee. The coffee berries are harvested and processed according to the traditional wet process, where the berries are depulped and washed to end up in the fermentation tanks, which are finished with drying on patios and the dry mill to prepare the coffee for export.

The roasting profile has been specially developed for this coffee, where the heat is moderate at the start of the process to dry beans at a leisurely pace. In the roasting process itself, high heat is applied which is gradually lowered towards the first crack. It is increased again after the first crack rolls, to finish faster and retain some of the freshness and acidity to keep the coffee straight. Ends at a medium-dark roast level.
