A roasting profile has been specially developed for this coffee, where the heat is moderate at the start of the process to dry the beans at a leisurely pace. During the actual roasting process, high heat is applied, which is gradually reduced towards the first crack. It is then increased again after the first crack rolls to finish quicker and retain some freshness and acidity to keep the coffee upright. It ends at a medium-dark roast level.

Green beans Organic Guatemala Finca Ceylan Y Anexos is a super complex organic coffee, with many different nuances, a smooth body, and a delightful impression in the cup. Compared to our other Guatemala coffee in the range, which comes from Antigua, this coffee is milder, yet with more flavor nuances and a deeper aroma.
The farm has been owned by the Echeverria family since 1870 and has always grown and processed coffee. Originally, the farm was called Finca Y Colima, but over the years, more farms were added, and the name was changed to Ceylan & Anexos. The farm's total area is 403 hectares, of which 2698 hectares are used for coffee cultivation.
The farm primarily employs labor from the local town to generate as many local jobs as possible. Finca Ceylan Y Anexos also contributes to social projects with housing, drinking water, and education for employees and their families.
The farm also aims for a social profile, with the protection of local water reservoirs and the vegetation in the area. Water reservoirs are protected, hence hunting and fishing are prohibited. The residue from the wet mill, which mainly consists of pulp and fruit flesh, is used as organic fertilizer in the coffee plantation, creating a self-sufficient ecosystem. To avoid pollution in the local streams, water from the fermentation tanks is filtered through oxidation filters.
The coffee trees grow at an altitude of 1,050-1,400 m.a.s.l with an annual expected rainfall of 3,500-4,000 mm and an average temperature of 20 degrees, making the climate ideal for coffee cultivation. The farm exclusively produces organic Arabica coffee of several varieties: Bourbon, typical, Mundo Novo, Robusta, Maragogype, Guexa. The annual production is approximately 180 tons of parchment coffee.
The coffee cherries are harvested and post-processed using the traditional wet process, where the cherries are depulped and washed, ending in fermentation tanks, followed by drying on patios and dry mills to prepare the coffee for export. Learn more about our organic coffee
