Huang Ya Cha Yellow Tea
Huang Ya Cha is a yellow tea that means ''Yellow Buds'' and is a rare tea that is not very widespread in the West.
Yellow tea is characterized by picking small top shoots in early spring, and then roasting them over a wok at a very high temperature for a few seconds.
When this process is over, the teas are rolled on bamboo trays and then tightly wrapped in paper or fabric, and dried and fermented over about 3 days.
Because yellow tea is lightly fermented, it is most often categorized together with white and green tea.
Yellow tea has a delicious sweetness and freshness, but the tea taste is strongly present.
