Ethiopia Shakisso coffee organic

This coffee, Ethiopia Shakisso is produced in the Shakisso area of ​​the Guji zone in the Southern Nations region. It is organically certified. The many meters of altitude in this region create an ideal microclimate for the cultivation of extraordinary coffees, where the coffee bushes receive plenty of rainfall. The farmers who produced this batch of coffee work together as private farmers. This means that they do not belong to a cooperative.

After picking the ripe coffee berries, they are brought to the local Borboya washing station, where they are sorted and then pulped to treat them with water until the green coffee beans end up in the large fermentation vats. They are then fermented in water for approx. 36 hours, depending on weather conditions. After washing and fermenting the beans, they are placed on raised benches to dry. At this point, the outer parchment shell protects the delicate coffee beans from sunlight. After about 10 days, the coffee is dry enough to be stored in the local warehouse before the coffee is shipped to our roastery in Kronborg.

This coffee is roasted for a short time at high heat so that it retains the fruit and the light acidity. A fantastic light roasted coffee with great potential.

The taste is fruity and light, with a distinct acidity that does not overwhelm the rest of the expression in the cup. The fruity sweetness is pleasant and the fullness increases as the coffee cools in the cup.

Ethiopia Shakisso should be drunk without milk and preferably solo - for maximum enjoyment.

Best brewed in V60 or Kalita or for the bold in an Aeropress.
