Gunpowder "Temple of Heaven" organic
Gunpowder tea, as it is also called, is made from small green tea leaves and after fermentation it is machine-rolled into balls so that its visual appearance is similar to that of gunpowder.
The tea leaves are specially selected for quality, size and shape so that they can be rolled into very small, tight balls. Heaven of Temple Gunpowder (also called Pinhead) comes from the Zhejiang Province of China and is the highest quality available in Gunpowder.
The leaves are only picked in April and May, when the quality of the green leaf is at its peak. The leaves are then steamed and tightly rolled.
When preparing this tea, part of the ritual is to take a pinch of the powder and drop it into a porcelain Gaiwan to hear the clang and clink as the balls hit the sides of the cup. Boiling water causes them to open like flowers and slowly sink to the bottom, adding a visual delight to drinking this tea.
Since Gunpowder Temple of Heaven is more tightly rolled than other teas, less of it is required when brewing. Use half of a tsp. per cup and let it soak for 1-2 minutes in boiling water. If you want to avoid the very slight bitterness in the tea, use water at 72 - 75 0 C. Also very good in a jug.
