Matcha Kyoto Cha No Yu organic
This matcha from Kyoto, Japan is a true ceremony matcha. It is of the very highest quality, and is used exclusively for chadō (Japanese tea ceremonies / translated to the way of tea).
When a ceremony matcha is to be produced, the tea trees are allowed to grow in the shade, 3 to 4 weeks before hand sealing. The reason for this is that the chlorophyll in the leaves increases, so that you get the characteristic green color and a greater production of the amino acid, Theanine. It is the theanine that gives the incredibly intense taste.
This intense taste is sweet, silky and has notes of grass. The lower the quality, the more grassy taste and bitterness is present.
