Is a spice that originates from America. Allehande gets its name from the complex taste of cloves, pepper, cinnamon and nutmeg. The berries lose their spicy aroma as they ripen, so they are harvested unripe and green. They are dried in the sun, after which they acquire a reddish-brown colour. The aroma is mainly in the skin of the berries.
Allspice is a fairly new spice in Western cuisine, but it is very versatile and is used in stews, baked goods and pickling. The spice is often used together with cinnamon and cloves.
