Description

Organic Honduras Capucas

A strong flavour with a distinctive acidity and aroma, rounded off by an intense aftertaste that awakens every taste receptor in your mouth.

Organic Honduras Capucas is a coffee from the La Paz area. It is grown and cultivated by the women of the organisation “The Coordinator of Rural Women in La Paz”, or COMUCAP for short. The organisation was founded in 1993 with the social aim of working for equality, sustainability and economic development. Today it has grown considerably and has 256 members from the surrounding districts.

The community does a great deal to secure opportunities for many women in the area. These are opportunities they would not otherwise have, including training and education in starting and running a coffee farm. Over the years, the farms in the community have achieved a high level of organic production, which is also fairtrade.

The Organic Honduras Capucas coffee trees grow at 1700-2000 m above sea level in the Comayagua mountains of south-western Honduras. Growing at this altitude means a low average temperature and a harder bean, which qualifies as “Strictly High Grown” (SHG).

The coffee is roasted fairly hard, with high heat at the start of the roast to get as much heat as possible into the bean at an early stage. This takes 7-8 minutes. The heat is then gradually lowered, following a special profile and a series of measuring points.
When perfectly roasted, it is a medium roast and not too dark.
