Szechuan pepper
(Latin: Zanthoxyllum piperitum ) is a Chinese pepper that comes from China's "eating chamber", the Szechuan province in the middle of China. Some of the best spices in the world come from here, including this beautiful, very strong and aromatic type of pepper.
Just a piece of advice from me: I love this pepper and often use it in my pepper grinder, just like I use whole black or white pepper. But this one is so deliciously strong and is clearly felt throughout the dishes.
But when I have to be picky, I pour the amount of oil on a pan that I intend to fry in. Then I throw 10-15 Szechuan peppercorns or Timut peppercorns into the now hot oil and roast them for a short time ( you can smell when the aromas are released) before I fry what needs to be fried.
