What is saffron?

Saffron is an exotic spice that has been nicknamed "the red gold" as it is the world's most expensive spice. Real Iranian saffron gives a beautiful reddish color and has a taste that is difficult to describe but must be experienced instead.

Saffron is a spice extracted from the anthers of saffron crocus. The ancient Greeks knew and cultivated saffron crocus. The Romans also valued saffron both as a spice and as a fragrance diffuser. After the fall of the Roman Empire, saffron returned to Europe when the Crusaders became familiar with Arab cuisine.

Today, saffron crocus is grown mainly in Iran, Spain, Greece, Turkey and India. Although saffron crocus is traditionally grown in Mediterranean countries, it can be grown as far north as England.

The price of saffron – the red gold

Saffron is the world's most expensive spice and has therefore been nicknamed "the red gold". It is not immediately apparent from the Crocus Sativus flower that its orange stamens contain the world's most expensive spice.

However, saffron is still the most expensive spice worldwide and for good reason. Each flower contains only three stamens, so many flowers must be used to make just one gram of saffron.

The exact price of saffron depends on its purity. However, approx. 70,000 flowers to make half a kilo of dried saffron. The flowers must also be picked by hand, as machines are too violent for the fragile saffron flowers. Therefore, the price of saffron also reflects the painstaking work that goes into it.

The taste of real Iranian saffron

Real Iranian saffron has a very special taste that particularly emphasizes other flavors in a dish. The taste and smell of saffron is somewhat reminiscent of honey, but the spice must be used in moderation, as too much saffron can taste bitter.

Where in the past saffron was primarily used as medicine and to color textiles, it has become popular to use saffron in cooking. Saffron is often used in dishes with rice, fish and shellfish and works well in paella, risotto or the fish soup boullabaisse, among other things.

Genuine Iranian saffron has a characteristic dark red color, which is also used to color baked goods, including Lucia buns.
