Silver Needle Guangxi White Tea
This white tea is from Guangxi, close to Yunnan Province. The shoots are picked carefully and treated gently.
There are between 7000 and 15000 shoots for 1 kilo, depending on the size of the shoots. The selection of the suitable shoots is done according to the sizes of the shoot; the largest shoots with intact sheath are sipped off and collected in small baskets. They are then carefully poured into large woven bamboo trays and set out in the midday sun for drying - fermentation - oxidation. After just 2 hours they are ready to be packed in bags. All this happens in the first part of the month of April. Degree of fermentation approx. 12%.
The tea itself has a beautiful light cup and a fresh, not big and not strong, but full flavor. Those of you tea drinkers who have hiked in the great Swedish forests and who have tried drinking the fresh, clear spring water from the streams, know what this wonderful water tastes like. When you brew tea on the new shoots from the tea tree, you get the same taste as the aforementioned spring water, albeit with a slight tea taste.

Brewing instructions:
It is best to brew the tea in a Gaiwan, Chinese tea brewer, where you can brew up to 4-5 times on 3-4 grams of leaves and use 1-1½ dl. tempered water of 72 - 74 0 C and drawing times of 20-40 seconds..
The instructions here are for a 1 liter jug:
- Dosage: 12 g per litre
- Drawing time: 1-3 min.
- Water temperature: 72 - 74 0 C
