Yun Mao Feng Green Tea
Yun Mao Feng comes from the Zhejiang province south of West Lake, east of Shanghai. This version hails from a small tea garden, neighboring the most famous Chinese tea garden known for producing top-quality Lung Jing tea. The soil is the same, which influences the flavor of this particular Mao Feng tea. Mao Feng means 'Hairy Peak' referring to the numerous fine tips in the tea and its growth in high elevations. In the southern part of West Lake, there is much morning fog and mist throughout the morning, which significantly affects the tea's flavor.
Its big brother is Huangshan Mao Feng, the most famous Mao Feng tea. However, it is almost impossible to find at affordable prices.
The finest teas are picked in early spring, before China's Qingming Festival (mid-June). When picking the tea leaves, only the new buds and leaves beside them are harvested. Local tea farmers say the leaves resemble orchid buds.
Though it is 'only' a 1st grade (A+) quality, its taste rivals that of a top-quality Mao Feng. It is mild with an enormously rich floral flavor and possesses a sweetness that characterizes high-quality teas, satisfying in a way that makes 'sweets' unnecessary.
Brewing Instructions:
- Water temperature: 72-740 C
- Amount: approx. 12 g per liter in a pot or 2 teaspoons per 150 ml cup
- Infusion time: max. 3 min in a pot, ½ min in a cup
