Panyong Golden Needle
This black Chinese tea is grown on the hillsides of the Thai-Mu mountains of Fujian province in Southeast China and is considered by many to be a high-quality tea. It is only picked in the month of April, when the new shoots emerge. Like some Japanese teas, the Golden Needle tea bushes are shaded approx. 14 days before harvest and the shoots are picked the same morning, when the white coat around the shoot (what we call white tea) falls off and the shoot is then green.
The appearance and taste of Panyong tea is reminiscent of a finely spiced Assam tea from a late picking. The finished cup has a bright , dark red color and an intensely fragrant slightly nutty taste. That tea is really incredibly soft, round, full-bodied and contains very little bitterness despite its intense taste. As one of the very few Chinese black teas, this lovely tea goes well with milk or cream (cream is best).
Brewing instructions:
- 12-14 grams per liters of water (5-6 teaspoons)
- 100 o hot water
- 3-4 min. draw time
