How is green tea made?
Like black tea, green tea is made from the leaves of the tea plants Camellia Sinensis and Camellia Assamica, or from hybrids of the two. This makes green tea true tea, just like white and black tea. So what is the difference between the types?
The basic difference is the way the leaves are treated after harvest. Shortly after picking, the tea leaves are carefully spread out on mats in a kind of greenhouse, where they lie undisturbed in the sunlight and ferment. Over a couple of hours, the temperature in the leaves rises naturally to around 60-65 ̊C. Outside air is then let in, so the temperature drops suddenly. During this process the leaves become 16-30% fermented.
Brew the perfect cup of green tea
There are a great many types of green tea. Depending on the variety and type, different brewing temperatures and steeping times bring out the best in the tea. Learning the brewing temperatures for every green tea by heart can seem overwhelming, but with Nordic Tea the perfect cup is never a challenge. All our teas come with specific instructions on how to brew them, so you bring out the best in every cup.
As a rule of thumb, though, green teas should be brewed at around 75-85 degrees. This is a lower temperature than for many other types of tea, because hot water can make the tea bitter. Some people may like a very bitter taste, but it can blur the many interesting nuances of green tea.
If you want to enjoy the perfect cup of green tea, steeping time also matters. The rule of thumb here is that the tea should not steep for much more than 2 minutes, and never more than 3 minutes per cup! Steeping too long makes the tea bitter, and you are left with a cup robbed of the delicate flavours that dance on the tongue.
Finally, the amount of tea affects the taste. Again, the tea should not become too bitter, so we recommend using no more than two grams of tea per cup you brew. A larger amount of tea can also make the tea bitter.

Have you tried matcha, a green tea in powder form?
If you like to broaden your repertoire and try something new, you can also try the popular matcha tea. Matcha is a type of Japanese green tea in powder form, with many of the same benefits as true green tea.
Matcha is produced in much the same way as true green tea. First, the whole green tea leaves, grown in the shade, are harvested. The leaves are handled gently and steamed to give the tea more flavour. They are then carefully spread out and dried. The dry leaves are ground into a fine powder.
The result is the popular and much-loved matcha tea: a finely ground powder in a bright light green colour, which you add directly to the water rather than letting tea leaves steep in water.
Is there caffeine in green tea?
The short answer is yes. A cup of green tea contains on average 27 mg of caffeine, but of course this depends on many things, such as the size of your cup and how much tea you use. Although green tea contains less caffeine than coffee, you will still feel a refreshing effect. At the same time, it takes very large amounts of tea before you feel the unpleasant side effects that coffee can bring, such as restlessness.
Is green tea healthy?
There are not many evidence-based studies that can show with certainty that green tea actually promotes health.
However, a study from 2024 points to a link between green tea and the likelihood of surviving ovarian cancer. According to the research, women who drink 1-2.5 cups of green tea a day may have a 16% greater chance of surviving ovarian cancer compared with those who do not drink green tea.
This is mainly due to the antioxidants in the tea, in particular polyphenols and the compound EGCG, which are thought to inhibit the growth of cancer cells.
In addition, green tea may improve fat burning and concentration, and even reduce the risk of cardiovascular disease.
